Every year, one-third of all the food produced goes to waste. This amounts to about 1.3 billion tons of food that are thrown out. An incredible waste! Not only of food but also of energy, land, water, and CO2 - putting a huge strain on the environment. 

Instock is putting food waste on the map, both literally and metaphorically. The founders of Instock were working as assistant managers at supermarket Albert Heijn when they thought of a way to create a better fate for unsold supermarket products. Their restaurants in Amsterdam, The Hague, and Utrecht, their products and their catering department, all attach new value to these foods - such as ripe mangoes, a broccoli with a beauty flaw and excesses of meat and fish. Every day the creative Instock chefs prepare breakfast, lunch, dinner, and snacks using the surplus of food.
